Ingredients
4–5 fresh carrots, peeled and grated
2 tbsp olive oil
1–2 tbsp lemon juice
1/2 tsp sea salt
1 tsp honey (optional)
1 tbsp chopped parsley (optional)
2 tbsp sunflower seeds (optional)
Instructions
1. Grate the peeled carrots using a box grater or food processor.
2. In a small bowl, whisk olive oil, lemon juice, salt, and honey.
3. Combine grated carrots with dressing in a large bowl.
4. Add parsley or sunflower seeds if using.
5. Let it sit for 10–15 minutes for flavors to develop.
6. Serve chilled or at room temperature.
