Description
A simple and delicious chicken salad with tarragon recipe that’s light, herby, and perfect for lunch, brunch, or meal prep.
Ingredients
2 cups cooked chicken (shredded or diced)
1–2 tbsp fresh tarragon, finely chopped
1/2 cup celery, diced
1/4 cup red onion or scallions, finely chopped (optional)
1/2 cup seedless grapes or chopped apple
1/3 cup mayonnaise or Greek yogurt
1 tsp Dijon mustard
1 tbsp lemon juice
Salt and black pepper to taste
Instructions
1. In a small bowl, whisk together mayo, mustard, lemon juice, salt, and pepper.
2. In a large bowl, combine chicken, celery, grapes, onion, and tarragon.
3. Pour dressing over the chicken mixture and stir until evenly coated.
4. Chill in the fridge for at least 30 minutes before serving.
5. Serve in lettuce cups, sandwiches, or on a bed of greens.
Notes
For a lower-fat version, use Greek yogurt instead of mayo.
Add chopped almonds or pecans for crunch.
Use dried tarragon if fresh is unavailable—reduce amount by half.
