Description
Inspired by the Popeyes pickle glaze chicken sandwich, this homemade version is sweet, tangy, crispy, and full of bold Southern flavor.
Ingredients
- 2 boneless chicken breasts
- 1 cup buttermilk
- 1 cup dill pickle juice
- 1 tbsp hot sauce (optional)
- 1 cup flour (for dredging)
- Vegetable oil for frying
- 2 brioche buns
- 4 barrel-cured or dill pickles
Pickle Glaze:
- 1/2 cup dill pickle juice
- 2 tbsp brown sugar
- 1 tbsp honey
- 1 tsp garlic powder
- 1/2 tsp red pepper flakes
Instructions
Marinate chicken in buttermilk, pickle juice, and hot sauce for at least 6 hours or overnight.
Mix flour with salt and pepper for dredging. Coat chicken and fry until golden and crispy.
In a small pot, combine all glaze ingredients. Simmer until thick.
Toast brioche buns in butter.
Brush glaze on fried chicken. Assemble sandwich with pickles and bun.
Serve hot.
